Creamy Tuscan Garlic Salmon with Spinach and Sun-Dried Tomatoes

Ingredients:

  • 4 salmon fillets
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 teaspoon Italian seasoning
  • 3/4 cup grated Parmesan cheese
  • 1 cup fresh spinach leaves
  • 1/2 cup sun-dried tomatoes, chopped

Instructions:

  1. Prepare the Salmon:
  • Season the salmon fillets with salt and pepper on both sides.
  1. Cook the Salmon:
  • Heat olive oil in a large skillet over medium-high heat.
  • Add the salmon fillets, skin-side down, and cook for about 4-5 minutes per side, or until the salmon is cooked through and flakes easily with a fork.
  • Remove the salmon from the skillet and set aside.
  1. Prepare the Creamy Sauce:
  • In the same skillet, add the minced garlic and sauté for about 1 minute, until fragrant.
  • Pour in the heavy cream and chicken broth, and stir to combine.
  • Add the Italian seasoning and grated Parmesan cheese. Stir until the cheese has melted and the sauce is smooth.
  • Add the spinach and sun-dried tomatoes, and cook for a few minutes until the spinach has wilted.
  1. Combine and Serve:
  • Return the cooked salmon fillets to the skillet, spooning the creamy sauce over them.
  • Let the salmon simmer in the sauce for a couple of minutes to absorb the flavors.
  • Serve the creamy Tuscan garlic salmon hot, with the spinach and sun-dried tomatoes.
