Ingredients:
- 3 cups all-purpose flour
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 5 large eggs
- 2 teaspoons vanilla extract
- 1 cup coconut milk
- 1 cup drained crushed pineapple
- 1 cup shredded coconut
- 1/2 cup pineapple chunks for topping
- 1/2 cup toasted coconut flakes for topping
- 3 cups cream cheese frosting
Directions:
- Preheat oven to 350F (175C). Grease and flour three 9-inch round cake pans.
- In a bowl, mix flour, baking powder, and salt. Set aside.
- In a separate bowl, beat butter and sugar until fluffy. Add eggs one at a time, then vanilla extract.
- Gradually add flour mixture and coconut milk to the butter mixture, alternating between the two.
- Fold in crushed pineapple and shredded coconut.
- Pour batter into prepared cake pans. Bake for 25-30 minutes until a toothpick comes out clean.
- Allow cakes to cool in pans for 10 minutes, then transfer to wire racks to cool completely.
- Frost one cake layer with cream cheese frosting, repeat with the second layer, and top with the third layer. Frost the entire cake.
- Garnish with pineapple chunks and toasted coconut flakes.
