Pineapple Coconut Dream Cake

Ingredients:

  • 3 cups all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 5 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup coconut milk
  • 1 cup drained crushed pineapple
  • 1 cup shredded coconut
  • 1/2 cup pineapple chunks for topping
  • 1/2 cup toasted coconut flakes for topping
  • 3 cups cream cheese frosting

Directions:

  1. Preheat oven to 350F (175C). Grease and flour three 9-inch round cake pans.
  2. In a bowl, mix flour, baking powder, and salt. Set aside.
  3. In a separate bowl, beat butter and sugar until fluffy. Add eggs one at a time, then vanilla extract.
  4. Gradually add flour mixture and coconut milk to the butter mixture, alternating between the two.
  5. Fold in crushed pineapple and shredded coconut.
  6. Pour batter into prepared cake pans. Bake for 25-30 minutes until a toothpick comes out clean.
  7. Allow cakes to cool in pans for 10 minutes, then transfer to wire racks to cool completely.
  8. Frost one cake layer with cream cheese frosting, repeat with the second layer, and top with the third layer. Frost the entire cake.
  9. Garnish with pineapple chunks and toasted coconut flakes.
