Shrimp, Zucchini, Potatoes, and Spicy Italian Sausage Foil Pack

Gather your ingredients:

  • 1 lb peeled and deveined shrimp
  • 1 large zucchini, sliced
  • 3 small potatoes, sliced
  • 1/2 lb spicy Italian sausage, sliced
  • 1/4 cup olive oil
  • 2 tbsp chopped fresh parsley
  • 1 tsp minced garlic
  • 1/2 tsp Italian seasoning
  • Salt and pepper to taste
  • 4 large squares of aluminum foil

Let’s cook!

  1. Prep your veggies: Wash and slice the zucchini and potatoes. Finely chop the parsley.
  2. Season your shrimp: In a bowl, combine the shrimp, olive oil, parsley, garlic, Italian seasoning, salt, and pepper. Toss to coat.
  3. Assemble the foil packs: On each square of foil, place some zucchini, potatoes, sausage, and shrimp.
  4. Seal it up: Fold up the sides of the foil to form a loose packet. Pinch the edges tightly to seal.
  5. Grill or bake: If grilling, preheat to medium-high heat. Place the foil packs on the grill and cook for 10-15 minutes per side, or until vegetables are tender and shrimp are pink. If baking, preheat the oven to 400°F (200°C) and bake for 20-25 minutes, or until heated through.
