Crock Pot Creamy Tomato Soup


Ingredients:

8 medium tomatoes, quartered or smaller
1/4 cup butter
Salt and pepper to taste
1 small onion, diced
1 pint heavy whipping cream
1 cup water (plus more if needed)
Instructions:

Melt Butter:

Cut the butter into small pats and place them in the crock pot set on low to melt. Once melted, add the diced onion and stir to coat in butter.
Puree Tomatoes:

In a blender, add half of the quartered tomatoes and 1 cup of water. Puree until smooth, then pour the mixture into the crock pot.
Puree the remaining tomatoes in the blender, adding a little more water if needed for smooth blending. Add the second batch of pureed tomatoes to the crock pot.
Cook Soup:

Cover the crock pot and cook the soup on high for 3-4 hours, allowing the flavors to meld together and the onions to soften completely.
Add Cream:

After the cooking time, reduce the heat to low. Stir in the salt, pepper, and heavy whipping cream. If the soup is too thick, add a little more water until you reach your desired consistency.
Final Cook:

Cover the crock pot again and let the soup cook on low for an additional 20 minutes, allowing the cream to heat through.
Serve:

Once the soup is ready, serve warm with your favorite bread, crackers, or cornbread for a comforting and creamy meal.
