4-Ingredient Slow Cooker Beef Tips and Potatoes

Ingredients
- 1.5 lbs (680g) beef stew meat, cut into bite-sized pieces
- 1 lb (450g) baby potatoes, halved
- 1 packet (1 oz / 28g) onion soup mix
- 1 can (10.5 oz / 300ml) condensed cream of mushroom soup
Instructions
Step 1: Prep Your Ingredients
Start by giving your baby potatoes a quick wash, then slice them in half. If your beef isn’t already cut, chop it into small, bite-sized chunks so it cooks evenly and becomes extra tender.
Step 2: Assemble in the Slow Cooker
Place the beef pieces at the bottom of your slow cooker—this helps them soak up all the flavor as they cook. Next, layer the potatoes right on top.
Sprinkle the onion soup mix evenly over everything, making sure it coats both the meat and potatoes. Then, pour the cream of mushroom soup over the top, spreading it out as best as you can.
Step 3: Let It Cook
Cover the slow cooker and set it to:
- Low for 6–8 hours, or
- High for 3–4 hours
By the end, the beef should be melt-in-your-mouth tender, and the potatoes perfectly soft.
Step 4: Stir and Serve
Once it’s done, give everything a gentle stir to blend the rich, savory sauce with the beef and potatoes.
Serve it hot, straight from the slow cooker. It pairs beautifully with crusty bread or even on its own as a hearty, comforting meal.
