Tater Tot Sausage Breakfast Casserole

Ingredients:
2 pounds of hot breakfast sausage
30-32 ounces of frozen tater tots
1 teaspoon of salt
1/2 teaspoon of pepper
1/4 teaspoon of garlic powder
1/4 teaspoon of onion powder
1 1/2 cups of shredded cheddar cheese
1/2 cup of mozzarella cheese
8 eggs
2 cups of milk

Instructions:
Preheat the oven to 350 degrees Fahrenheit.
Lightly grease a 9 x 13-inch pan with cooking spray.
Cook the sausage in a large skillet until fully cooked, and drain any excess fat.
In a large bowl, mix together the cooked sausage, tater tots, and both cheeses. Transfer the mixture to the prepared pan.
In a separate bowl, whisk together the eggs, salt, pepper, garlic powder, onion powder, and milk. Pour this mixture over the tater tot mixture in the pan.
If serving later, cover and refrigerate the dish. If serving now, bake in the preheated oven for 60 to 70 minutes or until the eggs are set.

Notes:
The dish can be made ahead of time and stored in the refrigerator or freezer.
If baking after refrigerating, add a few minutes to the cooking time.
When frozen, thaw completely and bake as instructed.
When reheating, thaw completely and cover with aluminum foil. Bake for 30 to 40 minutes at 350 degrees Fahrenheit or until heated through.
