Slow Cooker Chicken Alfredo with Broccoli

Ingredients & Setup

  • Boneless, skinless chicken breasts (around 1½–2 pounds)
  • Heavy cream, chicken broth, cream cheese, and seasonings (salt, pepper, garlic powder)
  • Optional: butter or additional dairy for extra richness
  • Pasta (usually uncooked penne or similar shape)
  • Frozen or fresh broccoli florets
  • Grated Parmesan cheese

Cooking Process

  1. Slow-cook the chicken: Combine chicken, cream, broth, cream cheese (and butter if used), plus seasonings in a slow cooker. Cook on high for 2 hours or low for 3–4 hours, until chicken is tender.
  2. Add pasta: Remove the chicken to rest briefly, then stir in uncooked pasta and cook for about 30 minutes on high or until the pasta is tender.
  3. Finish with broccoli & cheese: Chop the chicken, add broccoli and Parmesan cheese (optionally additional cream cheese or butter), combine well, and serve immediately.

Variations & Tips

  • Use alternative pasta shapes like rigatoni, bowtie, fusilli, or shells for versatility.
  • For extra richness, some versions include butter; others keep it lighter with just cream and broth.
  • Leftovers store well in the fridge for up to 4 days and reheat easily.
  • Helpful note: if the sauce thickens too much, loosen it with a splash of water or milk.

  • 1 pound uncooked pasta (penne, shells, or similar)
  • 12 oz frozen broccoli florets (or fresh, lightly steamed)
  • 1 cup grated Parmesan cheese

Instructions:

  1. Layer & Cook Chicken
    Place chicken, heavy cream, broth, cream cheese, and seasonings in the slow cooker. Cook on High for 2 hours or Low for 3–4 hours, until the chicken is fork-tender.
  2. Add Pasta
    Remove the chicken and let it rest briefly. Then add uncooked pasta to the slow cooker, and cook on High for about 30 minutes, stirring occasionally, until pasta reaches your desired doneness.
  3. Add Broccoli & Cheese
    While pasta cooks, chop the chicken. Once pasta is ready, stir in the broccoli, chopped chicken, and Parmesan cheese. Mix until the cheese melts into the sauce.
  4. Serve & Store
    Serve immediately with optional garlic bread or a fresh green salad. Store leftovers in the fridge for up to 4 days; reheat smoothly in the microwave or on the stove with a splash of milk or water to revive creaminess.

Chef Tips:

  • For a silkier sauce, add a little water or milk if it becomes too thick.
  • Substitute rigatoni, fusilli, or bowtie pasta for variation.
