1 large cucumber (sliced thinly)
2 medium tomatoes (diced or sliced)
1/2 red onion (thinly sliced)
1/4 cup red wine vinegar
2 tbsp olive oil
1 tbsp honey or sugar
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp dried oregano
1 tbsp fresh parsley or dill (chopped, for garnish)
Optional: 1/4 tsp crushed red pepper flakes (for a bit of heat)
Instructions:
- Prepare the Vegetables:
Slice the cucumber into thin rounds. If you prefer, you can peel the cucumber first.
Dice or slice the tomatoes into bite-sized pieces.
Thinly slice the red onion into half-moons.
- Make the Marinade:
In a bowl, whisk together the red wine vinegar, olive oil, honey (or sugar), salt, black pepper, and dried oregano.
If you like a bit of spice, add the crushed red pepper flakes to the marinade.
- Combine and Marinate:
In a large bowl, combine the cucumber, tomatoes, and onion.
Pour the marinade over the vegetables and toss gently to coat.
Cover and refrigerate for at least 30 minutes to allow the flavors to meld. For best results, let it marinate for 1-2 hours.
