Ingredients:
- 4 salmon fillets
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1 teaspoon Italian seasoning
- 3/4 cup grated Parmesan cheese
- 1 cup fresh spinach leaves
- 1/2 cup sun-dried tomatoes, chopped
Instructions:
- Prepare the Salmon:
- Season the salmon fillets with salt and pepper on both sides.
- Cook the Salmon:
- Heat olive oil in a large skillet over medium-high heat.
- Add the salmon fillets, skin-side down, and cook for about 4-5 minutes per side, or until the salmon is cooked through and flakes easily with a fork.
- Remove the salmon from the skillet and set aside.
- Prepare the Creamy Sauce:
- In the same skillet, add the minced garlic and sauté for about 1 minute, until fragrant.
- Pour in the heavy cream and chicken broth, and stir to combine.
- Add the Italian seasoning and grated Parmesan cheese. Stir until the cheese has melted and the sauce is smooth.
- Add the spinach and sun-dried tomatoes, and cook for a few minutes until the spinach has wilted.
- Combine and Serve:
- Return the cooked salmon fillets to the skillet, spooning the creamy sauce over them.
- Let the salmon simmer in the sauce for a couple of minutes to absorb the flavors.
- Serve the creamy Tuscan garlic salmon hot, with the spinach and sun-dried tomatoes.
