Delicious Salmon Florentine

Ingredients:

4 salmon fillets
Salt and pepper, to taste
2 tablespoons olive oil
1 tablespoon butter
1 small onion, chopped
3 cloves garlic, minced
10 ounces fresh spinach
1 cup heavy cream
1/2 cup grated Parmesan cheese
1 teaspoon Italian seasoning
Juice of 1 lemon
Directions:

Season the salmon fillets with salt and pepper on both sides.
In a large skillet, heat olive oil over medium heat. Add the salmon fillets and cook for 4-5 minutes per side, until fully cooked. Remove salmon from the skillet and set aside.
In the same skillet, add butter and allow it to melt. Add the chopped onion and cook until soft and translucent, about 3 minutes.
Stir in the minced garlic and cook for another 30 seconds until fragrant.
Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes.
Pour in the heavy cream, and add the grated Parmesan cheese and Italian seasoning. Stir well to combine.
Simmer the sauce for 2-3 minutes until it thickens slightly. Stir in the lemon juice.
Return the cooked salmon fillets to the skillet and spoon the sauce over them. Let everything simmer together for an additional 2-3 minutes.
Serve the salmon fillets with the creamy spinach sauce on top. Enjoy!
