Gather your ingredients:
- 1 lb peeled and deveined shrimp
- 1 large zucchini, sliced
- 3 small potatoes, sliced
- 1/2 lb spicy Italian sausage, sliced
- 1/4 cup olive oil
- 2 tbsp chopped fresh parsley
- 1 tsp minced garlic
- 1/2 tsp Italian seasoning
- Salt and pepper to taste
- 4 large squares of aluminum foil

- Prep your veggies: Wash and slice the zucchini and potatoes. Finely chop the parsley.
- Season your shrimp: In a bowl, combine the shrimp, olive oil, parsley, garlic, Italian seasoning, salt, and pepper. Toss to coat.

- Seal it up: Fold up the sides of the foil to form a loose packet. Pinch the edges tightly to seal.
- Grill or bake: If grilling, preheat to medium-high heat. Place the foil packs on the grill and cook for 10-15 minutes per side, or until vegetables are tender and shrimp are pink. If baking, preheat the oven to 400°F (200°C) and bake for 20-25 minutes, or until heated through.
