Cheesy Garlic Butter Rollups

Prep Time: ~10 minutes
Cook Time: ~12–15 minutes
Yield: 8 rollups
These rollups are a simple, satisfying treat—crispy bread wrapped around gooey cheese and brushed with fragrant garlic butter. They’re perfect for parties, an after-school snack, or a quick side dish.
Ingredients
For the Rollups
- 8 slices sandwich bread (white or whole wheat), crusts removed
- 1 cup mozzarella, shredded
- ½ cup cheddar, shredded
- (Optional) 2 tbsp grated Parmesan
For the Garlic Butter
- 4 tbsp unsalted butter, melted
- 2 garlic cloves, minced
- ½ tsp garlic powder
- 1 tbsp fresh parsley (or 1 tsp dried)
- ¼ tsp salt
Optional Dipping Sauces
- Marinara sauce
- Ranch
- Garlic-herb dip
- Spicy ketchup
Instructions
- Preheat & prepare pan.
Heat your oven to 375 °F (190 °C). Line a baking sheet with parchment paper or a silicone mat. - Flatten the bread.
Using a rolling pin, gently press each bread slice until it’s thin and even. This helps the rollups seal and bake evenly. - Add cheese and roll.
On the lower third of each flattened bread, sprinkle mozzarella, cheddar, and (if using) Parmesan. Roll the bread up tightly from the cheese side, pressing to seal the edge. If needed, dab a little melted butter along the seam to help seal it. - Make the garlic butter.
In a small bowl, whisk together melted butter, minced garlic, garlic powder, parsley, and salt. - Brush & bake.
Place each rollup seam-side down on the baking sheet. Brush generously with the garlic butter mix. Bake 12–15 minutes, or until golden and crisp. (If using an air fryer, bake at ~360 °F / 180 °C for 8–10 minutes, flipping halfway.) - Serve warm.
Let them cool just a minute, then serve while hot with your favorite dip.
Why These Rollups Are So Irresistible
- Crisp outside, melty inside — The bread bakes to a golden crisp while the cheese melts beautifully within.
- Flavor in every bite — Garlic butter seeps into all the folds, infusing each roll with savory goodness.
- Quick & fuss-free — No frying, no complicated steps; just roll, bake, and enjoy.
Variations & Tips
- Cheese swaps: Try provolone, Gouda, pepper jack, or a cheese blend if mozzarella or cheddar aren’t available.
- Extra flavor: Add chopped spinach, sun-dried tomatoes, or cooked bacon inside.
- Crispier finish: Use a wire rack on the baking sheet so air circulates under the rollups.
- Spicy version: Mix in red pepper flakes or hot sauce to the garlic butter.
Storage & Reheating
- Let the rollups cool completely before storing to prevent sogginess.
- Store in an airtight container in the fridge for up to 3 days.
- Reheat in the oven or air fryer to restore crispness (about 5–7 minutes at 350 °F / 175 °C).
