- 1 teaspoon baking powder

- 1/2 cup sugar
- 1/2 cup brown sugar, packed
- 2 large eggs
- 1 cup sour cream
- 1/2 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 1 cup Cinnamon Toast Crunch cereal, crushed (plus extra for topping)
Instructions
- Preheat the oven to 350°F (175°C). Grease a loaf pan with butter or line it with parchment paper.
- In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and sugars.
- In a separate bowl, mix the eggs, sour cream, melted butter, and vanilla extract.
- Gradually add the wet ingredients to the dry ingredients and stir until just combined.
- Gently fold in the crushed Cinnamon Toast Crunch cereal.
- Pour the batter into the prepared loaf pan.
- Sprinkle some additional crushed cereal on top for extra crunch.
- Bake for 50-55 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
- For added flavor, you can mix in some mini chocolate chips or nuts.
- Store leftovers in an airtight container for up to 3 days.
