Slow Cooker Lasagna Soup

Ingredients

  • 1 lb ground beef
  • ½ onion, finely diced
  • 1 red bell pepper, finely diced
  • 1 can (14.5 oz) petite diced tomatoes
  • 1 can (28 oz) crushed tomatoes
  • 1 teaspoon minced garlic
  • 1 tablespoon Italian seasoning
  • 4 cups beef broth
  • 12 oz lasagna noodles
  • ½ cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded Parmesan cheese

Instructions

Start by heating a large skillet over medium-high heat. Add the ground beef and cook until it’s nicely browned, breaking it up as it cooks. Once done, drain off any excess grease.

Transfer the cooked beef into a 6-quart slow cooker. Add in the diced onion and red bell pepper, followed by the diced tomatoes and crushed tomatoes.

Next, stir in the minced garlic and Italian seasoning, making sure everything is evenly combined.

Pour in the beef broth and give the mixture a good stir so all the ingredients are well blended.

Cover the slow cooker and cook on low for 6–8 hours or high for 3–4 hours, allowing the flavors to fully develop.
